Most of the couples I marry have hit that road block...what to say and how long should it take to say it?
The easiest advice I can give is to look through a Google search (you'll find thousands of vows) and pick pieces from the ones you like. You don't have to repeat the same exact vows word for word to each other either.
Sometimes just sitting alone with a pen & paper, thinking of what you like about your partner and letting the words flow will help.
When the big day finally arrives, the right words always come. I see it every time. Even the prewritten vows online take on a beauty when you are hearing them from the person you love in front of all your family and friends.
